Visagi Oil | An Italian organic extra virgin canino monocultivar olive oil.
Our oil is an Italian extra virgin olive oil obtained from the cold pressing of canino monocultivar olives. It is organic, produced in full compliance with the principles of biodiversity. This means that we only process native olives harvested in our olive groves and in the surrounding area: this is what gives Visagi oil an authentic flavour and a fruity scent with hints of almond, aromatic herbs and artichoke. This allowed it this year to receive 5 drops out of 5 at the prestigious “L’Oro d’Italia 2023” competition with Praise of Excellence and from Gambero Rosso “Oli d’Italia 2023” the Monocultivar Caninese Bio Due Foglie award.

The entire manufacturing of our products follows the rules of organic processing and also gives our oil mill reserves unique hints of thistle, grass and almond: an exquisite sensorial experience to discover the authentic flavours of this magnificent territory.

The fruits of our olive trees are harvested a few weeks before full ripeness, while they are very fresh and still very green. It is for this reason that Visagi oil has more pronounced aromas and fragrances, with a slight hint of spicy. It is also characterized by an emerald green colour along with soft golden reflections.

According to the law, an extra virgin olive oil must have an acidity lower than 0.80% and in DPO extra virgin olive oil it must never exceed 0.40%. The acidity of our oil has never been higher than 0.25%, making it of the highest quality by all aspects.

In our opinion, a quality oil must not only have a “superior category” of flavours and aromas, but also nutritional characteristics and healthier properties which are more elevated compared to the rest.

CERTIFICATIONS

The Visagi Coraggiosi farm has been applying the organic farming regime since 2008 pursuant to reg. CEE n ° 834/2007 and n ° 889/2008. The olive trees are registered in the canino DOP at the Chamber of Commerce of Viterbo.

NUTRITIONAL VALUES

VISAGI oil has a very low acidity level, not higher than 0.25 (expressed in grams of free oleic acid per 100 grams of oil) which is aligned to the current legislation which states that to be included as DOP Canino extra virgin oil it must not exceed 0.40 of acidity.

RIPENING

The fruits are relatively small and resistant to detachment, they ripen late in November and the harvest is usually done in mid-October, to enhance the fragrance.

HARVESTING

It is always done by hand, with only the support of mechanical tools that comb the branches allowing the olives to drop on special sheets.

INSPECTION

Immediately after harvesting, the olives are visually selected, moved into suitable containers (bins) and then moved on to the following phases: defoliation and washing.

COLD PRESSING

There are two main parameters of these stages of production: timing (within 24 hours of harvesting) and temperature (below 27 degrees Celsius). Keeping these indicators under control allows us to obtain a product of the highest quality.

DECANTING

The oil is stored in special stainless steel containers, under nitrogen so as to avoid contact with oxygen, in air-conditioned rooms at a constant temperature between 12 and 15 degrees.

BOTTLING

This is the final stage when you can taste the oil in different formats, from the smallest 100 ml bottle ideal for tasting to the 5L tin can so you will never run out. Now we are ready to deliver our oil to you.
