The harvest of our olives (and how to buy Visagi’s oil!)
The harvest season of the olives of Visagi’s oil is coming to an end. Alessandro and Cecilia left Milan towards Farnese, to gather the precious results of their olive grove.
Thousands of kilograms of canino mono cultivar olives, of which cold pressing will produce the extra virgin olive oil Visagi. A biological oil, who rise following the total respect of the biodiversity principles.
With passion and enthusiasm, Visagi’s brigade is occupying their days under an autumnal sun of the ancient Etruria; picking up the olives, not yet perfectly mature, to enhance the fragrance and all the smells. Thanks to the use of some mechanical tools, that comb the branches, without damaging it, the olives drop on special sheets and are then visually selected.
Successively all of the fruits are moved in an adequate container, defluorinated and squeezed in maximum 24 hours from the harvest. It is thanks to the respect of those specific steps that our green oil preserves intact all of its nutritional properties, containing a low acidity.
At the moment our oil is stored in special stainless-steel containers, under nitrogen so as to avoid contact with oxygen.
